1 tsp turmeric powder
1 tsp garam masala
1 tsp red chili powder
1 tsp amchur powder
2 tbsp butter
Salt, to taste

Soft bread, for serving


In a large pot, heat the butter over medium heat.
Add the cumin seeds and let them crackle for 30 seconds.
Add the diced vegetables and stir-fry for 5-7 minutes until they start to soften.
Add the pureed tomatoes, turmeric powder, coriander powder, garam masala, red chili powder, amchur powder, and salt. Stir to combine.
Reduce the heat to low and let the Bhaji simmer for 10-15 minutes, until the vegetables are completely cooked and the sauce has thickened.
Use a potato masher to mash the vegetables until they are smooth and well combined with the sauce.
